Make ahead sides/appetizers for potluck turkey day
Not your traditional sides and appetizers, but if you are looking to mix it up with something new that is both yummy and easy to make ahead of time, here are a few favorites:

Roasted carrots and red onions with fennel and mint
Simple and elegant with a taste that makes you think you just walked into a high-end restaurant. Delicious and easy to make!
Serves 8 / Shopping list:
Carrots (2 lbs or two bunches)
Red onions (2 large)
Fennel bulb (1) - I find them so delicious I’d recommend two
Lemon (1 or the equivalent of 1 T)
Mint leaves (2 T) - I think the dish is just as good without if you don’t have mint
Raw Sunflower seeds (2 T) - I’ve substituted with sesame seeds (about 1 T)
Aleppo pepper (½ t) or a pinch of crushed red pepper flakes - I’ve substituted with Korean red pepper flakes
Hungarian hot paprika (½ t)
Sherry vinegar or red wine vinegar (2 T)
Olive Oil
Salt

Zesty lime shrimp and avocado salad
This amazing salad is very much like ceviche, except the shrimp is cooked. Another recipe that is delicious and easy to make!
Serves 4 / Shopping list:
Red onion (1/4 cup)
Limes (2)
Tomato (1 medium)
Hass avocado (1 medium)
Jalapeño (1)
Cilantro (1 T)
Jumbo shrimp - cooked, peeled (1 lb)
Olive oil
Kosher salt
Black pepper

Blue cheese stuffed Medjool dates
I didn’t think I liked blue cheese and then I discovered these. Both sweet and savory, they are scrumptious! With just two ingredients they’re super easy to make too.
